Cran-Apple Chicken Salad

I love to whip up recipes in the kitchen, but by the time the weekend rolls around.. I’m over it! One of my favorite things to have on hand during the weekend is chicken salad. I typically make it on Friday during Audrey’s nap and by Sunday it’s gone!

Having it ready to go in the fridge is a lifesaver for the times when you just don’t feel like cooking! You can serve it as a classic chicken salad sandwich, or fancy it up a bit by stuffing it in croissants. I also love to scoop some on top of a handful of spring salad mix (low carb!), or eat it as snack with crackers (okay..gimmie all the carbs! haha).

I used up the rest of our apples from our trip to Lohr’s Orchard in this recipe. (To see another sandwich recipe that calls for apples click here!) I also used non-fat plain greek yogurt instead of mayo. It cuts out some of the fat AND adds protein. I promise you will not be able to taste the difference. This chicken salad is truly guilt-free…which is a good thing because it’s soo delicious.

Time to make: 40 minutes

You will need:

1lb of chicken – baked and shredded

2 apples-diced

2 stalks of celery – chopped

1/4 cup of walnuts – chopped

1/4 cup of dried cranberries – chopped (check the nutritional values on back when purchasing, some brands are loaded with sugar. I try to find the ones that are “no sugar added”.)

1 scallion stem – chopped

1/4th cup to 1/2 cup non-fat plain greek yogurt or mayo. (Depending on the consistency you prefer.)

Salt and pepper to taste

While your chicken bakes in the oven (I typically bake chicken at 410 for 30-40 minutes), chop up your apples, celery, walnuts, dried cranberries and scallion. After your chicken is thoroughly cooked, shred it (I use two forks) and mix your chopped fruits and veggies into it. Then, add the yogurt or mayo. I recommend starting with 1/4 cup yogurt or mayo and add more as needed.

If you are preparing this the day that you would like to eat it, I recommend making it a few hours before. It tastes better the longer it marinates!
